3kg Pork ribs
1 cup Brown sugar
1 cup Salt
3/4 cup Paprika powder
1/4 cup Garlic powder
1/4 cup Onion powder
1/4 cup Cumin ground
1/4 cup Chili powder 1/3 cup Black pepper
2T Mustard powder
2 cups Tomato sauce
1/2 cup Apple cider vinager
1/2 cup Molassas
1/2 cup Brown sugar
1T Mustard
1t Salt
1t Chilli powder
1/4t White pepper
1t Paprika powder
1/2t Mace ground
1/2t Cumin ground
1/2t Hot sauce
Trim the ribs and cut each rib into 2 lots. Mix the rub ingredients, this is way more than you need but can be stored in a air tight container and used on chicken or other BBQ meats, apply the rub to the ribs and place evenly in the baskets of the Multi Kai Cooker which are best lined with tinfoil.
On the base of the cooker place a hand full of manuka chips in tinfoil and a bake bean tin of water, light the cooker on a medium heat and add the baskets of ribs then the outside casing and lid. Let this cook for an hour then toss the ribs in the BBQ sauce and return to the cooker and continue to cook till the bones start to pull away from meat approx. 1 hour.
Don't let the ribs dry out, brush on a little more sauce if needed and add a little more water and manuka chips. Serve with a finger bowl and paper towels they are messy and good!!!!
