Creamy Pāua on Chips!
A pan/skillet of creamy pāua to smother over multiple servings of hot salty chips.
Ingredients:
3 pāua, cleaned (approx. 500g)
25g butter
1 1⁄2 cups full cream
1 tsp olive oil
1 small onion, thinly diced
3 cloves garlic, minced
salt & pepper
1kg bag of frozen chips
Method:
Start by removing teeth and gut sac of your pāua, then wash thoroughly under cold water. Cover your pāua with tea towel/cloth and smash with a meat tenderiser on both sides, attention to the tough edges. Chop your pāua into smaller pieces and blend in meat mincer.
Depending on air fryer/oven now would be the time to get your chips on.
Heat butter and oil in a pan/skillet over a medium heat. Add your onion and garlic, cooking till softened, but not brown, then add and sauté your pāua in, keeping it moving to ensure even cooking for approx. 10mins till tender to bite. Add cream and bring to the boil, then turn to low and simmer (approx. 2/3 mins) until reduced slightly and thickened. Season with salt and pepper.
Get your chips out of the oven and distribute into bowls/plates, spreading your creamy pāua mixture over the top, then enjoy!
