Scallops / Mussel Is bake with white wine with a herb bread crust in the shell
Ingredients
12 Scallops or Mussels or Oysters in 1/2 shell
1 Cup fresh bread
2T fresh herbs (basil, parsley, coriander etc)
1T Parmesan grated
2T Olive Oil
1/2 Clove garlic finely choppped
Salt
4T White Wine
Method
Pre-heat the Multi Kai Cooker on high.
Clean the shellfish and loosen from the shell.
In a whizz, blend the bread, parmesan, herbs, garlic and olive oil to a fine green crumb then spoon enough on to the shellfish to cover. Arrange the shellfish on the Multi Kai racks and add a little white wine to each then place the racks into the pre- heated cooker. Bake the shellfish till the crumbs are turning golden but be careful not to overcook them. Once cooked arrange on a platter and serve, if they last that long.
